Sampling video/film - what's going on technically?
I accidentally used an MP4 video as a sample. I like it. Can anyone explain what exactly is going on here in the conversion from mp4 video to sound? Is it some digital binary thing similar to converting a jpeg?

If you load MP4 in Linux: the audio track from MP4 will be loaded (using ffmpeg or avconv).
If you load MP4 in other systems: the file will be loaded as raw data: you will be prompted to manually select the data format (number of bits, channels, etc.).

Raw audio data represents amplitudes? Would the data be taken from the sound and the video?

Yes.Raw audio data represents amplitudes?
MP4 sound and video is a compressed bytestream. If you open it as RAW audio - you will hear some sort of noise.Would the data be taken from the sound and the video?
